- Ingredients:
- 1 cup flour
- 1 cup whole wheat flour
- 1/2 cup rolled oats (not instant)
- 1/4 cup wheat germ
- 2 teaspoons baking soda
- 2 teaspoons caraway seed
- 1/2 teaspoon salt
- 1/2 cup cup cold butter or margarine, cubed
- 1 cup of buttermilk
- 1 tablespoon of molasses
Grease a 9 inch by 5 inch loaf tin. Preheat oven to 375 degrees F.
Whisk together the flours, oats, wheat germ, baking soda, caraway seed and salt. Cut in butter until the mixture is crumbly.
In separate bowl, whisk together the buttermilk and molasses. Stir into the flour mixture to make a soft dough.
Turn out onto a lightly floured surface and knead 1o times. Shape into an 8 inch long oval. Score the top with a knife lengthwise down the centre of the loaf and tranfer to the prepared loaf pan.
Bake for 45 minutes until the loaf sounds hollow when tapped on the bottom. Let cool completely before slicing.
