- Ingredients:
- 1/2 cup butter or margarine
- 1 10 oz sweet potato, peeled and cubed
- 1 1/4 cups buttermilk
- 1 3/4 cups all purpose flour
- 1 1/4 cups whole wheat flour
- 2 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
Heat oven to 425 degrees. Prepare a baking sheet.
Place sweet potato in a microwave safe bowl with 3 tablespoons of water. Microwave covered on high 6 to 8 minutes until tender. Mash and cool in the refrigerator.
Combine dry ingredients and cut in butter until mixture resembles a coarse meal.
Combine mashed sweet potato and buttermilk and add to dry mixture. Stir just until a dough begins to form.
Turn out onto a lightly floured surface and knead 3 to 4 times. Pat dough into a 7 inch by 10 inch rectangle and divide into 12 biscuits.
Place 2 inches apart on a prepared baking sheet and bake for 15 t0 20 or until done.
